Sushi rice is usually a 80/20 mix of short grain 'sticky' rice and long grain or pure sticky rice. There three types of rice by size with different thing i makes.

Short grain: sushi, riceballs and you need it to hold a shape.
Medium grain: risotto, rice pudding, stuff you want to make a creamy or casserole type.
Long grain is just good for almost everything. It doesn't stick to nothing and it fluffy.
