I always say Cowboy Bebop. The English dub is a great start; it's accessible on TV still, and doesn't have too many odd Japanese-cultural-moments to make anyone confused like a slice-of-life show might.
It really also shows the extent to which anime can be used for action, drama, AND comedy.
Plus, it's just so fun and easy to watch. Great animation and music = good time for anyone.
Basically, you want anime like this. I
DO NOT RECOMMEND CLANNAD since really doesn't shine until later episodes and you don't have that long to convice them. Also you want something with WONDERFUL dubbing - and Clannad does NOT have good dubbing.
Black Lagoon, Darker than Black, and any highly regarded Seinen or Josei sub genre that have good dubbing are your best bet. Trust me I am a professional, I've gotten preppy highschool cheerleaders to watch anime. Also, if you only have one shot then try a movie - something without a Overly complicated plot (Read or Die might be good). Of course, I really would have to know the person and what they like, but as someone pointed out already, an anime like DeathNote works great with anyone who loves suspense mind games type stories espcialy since the first episode draws you right in.
And that is the most important. No matter how much of a great anime something is, make sure the first episode makes them want to watch a second.
