So I just finished K-On.

It was ok, but the ending totally blew. There was no closure.
I figured there would be like a 60second segment at the end of the last episode, ya know, showing them a few years from now when they were famous or something, looking back on when they started the band.
Thats how I would have ended it.

But, no. Ending sucked. We never know if they become famous, or whatever.
Meh.

K-ON is a guilty pleasure. We all watch it, but in retrospect the series is not that good at all. It's mediocre at best. I can think of many slice-of-life animes that are better, yet the characters are enough to endear us to keep coming back for more.

Every so often one of the girls does something so funny or cute that it makes you want to stick around.

No, the OP fails because he missed the whole point of the show. The ending was NOT supposed to be climaxing, nor was it supposed to have a closure (unrelated to the second season).
To OP - Try watching a few dozen more animes, and then re-watch K-ON.

K-On is definitely Great at their own Category, so don't try to push in your values in to K-On's category.

Yes, I tell myself that i'll only watch one episode but I find myself finishing it.
The funny and cuddly things they do, it entertains me.

K-ON! is one of those moe blobs that is actually quite addicitng, especially the first season. Season 2 feels more like the same but I feel this time it is forced compared to the 1st season, nonetheless it's a still a good anime that offers more than nothing except those Moe and Kawaii moments which I need a dose once in a while.

What's good about it? Only thing we like about it is the characters, and it's not even the "right" kind of character humor. We're laughing at the characters and not with them most of the time, but that usually is only a "wrong" method in the movie industry and separate from other forms of media I suppose.

Nothing else stands out. Music I guess stands out a bit, but story, art direction, characterization. It's all something we've seen in another slice-of-life and mostly seen done better.
