It's pretty much the same concept as having your hard drive in a RAID except you still have the memory available if you need it. Triple channel increases the performance even more. You aren't forced to populate your motherboard with either 2 or 3 identical RAM sticks to make it work. But you'll miss out on the performance gain.
The i5's and the i7 8xx's use dual channel. The i7 9xx's uses triple channel on a different socket. The i7 9xx's socket is also going to be the same socket used in the upcoming 6-core that they are making. Thus the i7 920 is your best value if you have the need to upgrade your processor again in a couple of years. Also its hyperthreaded so its like getting 8 cores.

I would defiantly recommend an i7 920 not only because of the tripple channel but also the socket that the 920 uses is supposed to be used in the new line of processors. If you live in the US i would check and see if they have a micro center near you. If you go to microcenter.com you can reserve a processor for pickup only. An i7 920 is 200 and a i7 860 is 230. I managed to build my system for $580 of course i did use my old case and hard drive.

Your rig has almost the same specs as mine except for the psu which is a hec cougar 700W and the VGC, GTS 250. From our currency to US currency I would probably be paying approximately of $1100. Which I would be doing next week. It's hell buying pc parts if you don't know shit about sockets and functionality, plus our pc retailers here know almost nothing on what they're selling so they base it on the price. Damn bastards.

Ya i know how you feel i hate asking retailers pc questions all they ever do is just pick up a box and start reading it off to me. Thats why i always check online reviews to see if somethings crap or not at least then the people know something about computers.

I had a Q9550 for my old setup and if I didn't get such a killer deal for an i7, I would still be rocking it. It's a great setup you have there and I wouldn't worry about overhauling the setup until Gulftown (Core i7-970 & i7-980 XE) comes down in price, which will be a long time from now.
