at work i cured and smoked 3 different kinds of bacon.
1. Rosemary, garlic, bay leaf, peppercorn.
2. Brown sugar
3. Red pepper flakes, garlic, aleppo pepper, peppercorn.

no but seriuosly, what do they call it in canada? american bacon? that's what a russian pizza place i used to go to called it. as oposed to canadian bacon(aka-ham). it was also the only pizza place i seen that offered pastrami as a topping. those crazy rooski's!

The only few times I had a taste of bacon it didn't appeal to me much at all. Maybe because it wasn't cooked right. I've yet to taste this heavenly bacon you people talk about.

freshly cooked bacon is the best. i recomend going and getting some at the store and making it your self in a frying pan. no mcrowave or pre cooked, those are both crimes against humanity. store bought bacon bits are a misdemeanor, but i'll let you off with a warning. this time.

Bacon wrapped pork fillets seared in a smoking hot pan with salt and paper, then grilled to cook them......*drools* my favorite thing to make on the grill aside from steak.

I don't buy pre-packaged bacon usually. Most of the time I go to a meat shop and ask for them to cut it thick because I'm not a fan of thin bacon. The only problem is the fact that it costs an arm and a leg to buy it.

Ill post a basic cure recipe and how to cook it in the next couple of days.

I've made a discovery! bacon bits are way better if you heat them up first. i tried putting some on a piece of foil in the toaster oven, and they were much better than eating them straight out of the bag.

My gf is absolutely crazy for bacon, I will not touch pork with a 2 foot stick. I prefer much leaner meats (poultry, fish, etc -- I even try to not eat beef that often either).

While I appreciate the informative copy / paste, I'll stick to my lean chicken breast, which comparatively only has 1.5g of fat or so (0.5g saturated) in a 4 ounce serving.
