Fighting two moons' worth of demons and sending them back to whence they came all on his own, then going to earth to kill some more.

Another vote for Sanger Zonvolt.
In fact, if the ultimate man is determined by a combination of power and manliness, then Sanger stands near the top of the pile of ALL manly characters EVERYWHERE, not just in video games. Consider his history (Incoming Wall of Text!):
1) Sanger made his debut in SRW Alpha Gaiden where he established his badass credentials as the second-strongest villain in the game after the final boss, and became so popular with the fans that Banpresto brought him back in Alpha 2 as one of the main characters.
2) In Alpha 2, among many other crowning moments, Sanger introduced us to his trademark mech, Daizengar/Dygenguard/however you want to pronounce it, in this scene:
3) He then proceeds to kick unholy amounts of ass for the rest of the game using only his sword, the Type-3 Zankantou. This is in a game series where every godddamn mech has giant laser cannons and psychic pilots and stuff like that. Sanger is just a normal guy with a big-ass sword and he's the most badass of them all.
3A) Bonus points: If the Alpha and OG franchises are concurrent with each other, then Daizengar uses a different OS for its default weapon systems. This means that in the above scene while Sanger was busy being a colossal badass he was also pulling a Kira Yamato on us and completely rewriting Daizengar's operating system to make it compatible with his fighting style.
4) The final battle of Alpha 2 pits the protagonists against Irui Gan Eden, the Goddess of Earth. If Sanger is chosen as the protagonist, in his route he ends the battle by cleaving god. Kratos had better sleep with one eye open.
5) Cut to Alpha 3 now, Sanger gets demoted to supporting character while new guy Touma Kanou takes over. But yet again Sanger demonstrates the power of his popularity by showing up in all the other character routes, even the ones that don't follow his Alpha 2 timeline. In these other routes he continues to be one of the best pilots in the series despite just having woken up from cryosleep and not being as experienced with Daizengar as he is in Touma's route.
6) The end of Alpha 3 pits Sanger, Touma, and the Alpha Numbers against Keisar Ephes, a being who is stated to be the opposite number of the Ide (as in the infinite life force-ish power that allows the Ideon to cleave planets in half with an infinitely-long energy sword, annihilate galaxies, and shoot black holes as freaking projectiles) and has a thematic role in the series similar to Satan. Sanger can kill this guy by, you guessed it, cleaving him, though Ephes is so monstrous that even Sanger needs a little help from Touma on this one.
7) He's even more badass than himself. In the OG timeline, Sanger faces off with his alternate-universe kinda-sorta-Evil Twin, Wodan Ymir, and manages to hold his own despite Wodan's Thrudgelmir having much more powerful weapons and a regeneration function. When the two have their climactic showdown near the end of OG2, their combined power is sufficient to accidentally bust a hole in a reinforced shelter designed to withstand an alien invasion.
So yeah, Sanger's pretty goddamn badass. Kamina could take lessons from this guy.
