If this is Average, then what I am? A novice? This is pretty good. I've been drawing 2-3 years (Manga) and I still can't really draw anything besides Heads/Faces/Portraits
Doujin isn't Fan-works, it is self-published Manga. It's typically Fan Works and Ero, but not always. it can be entirely original work. Manga is just the Japanese word for Comics. So Doujinshi, are technically still Manga. Hentai is a genre of Manga. There's Shonen, Shoujo, Bi-Shonen, Bi-Shoujo, Yaoi, Yuri, Hentai. (That's all I know, but there could be more)

It depends on when I'm watching it.
Sometimes, I play Anime through my TV while I'm trying to sleep, so I like Dubbed then, so I can understand what's going on without focusing on the words.
But Subbed any other time.
