Of course people who's searching for more excitement will occasionally feel that Vanilla is just boring. This also applies to people who hates NTR, since they found out it was to extreme for them.

Vanilla is not better than NTR, and NTR is also not better than Vanilla. Both are different genres made for different kinds of people. So, Vanilla being boring is as subjective as why people hate NTR.

A good vanilla is not limited to just "Guy and Girl in love and then have sex", but how the romance is developed, the escalation of the feeling and then finally the "actions".

A Good Vanilla example is Manga's by Homunculus. The Vanilla in Homuncllus's Works is not just about (Guy+Girl=Normal Sex) but more on how the couple found their romance and share with it.

Examples
In Milk No Jikan, The narration of the story tells us that the protagonist is having Sex with a mother, initally we will think it will be a NTR twist, but at the end we found out the heroine is a single mother.

In Pay By Love, The story initially tells us that the heroine is a slut, that will allow men to have sex with her for a price, to finally found out that her friend tricks the protagonist, and it turns out she's a pure virgin who is just too shy to tell the protagonist that she loves him.

Those are good examples of Vanilla stories, Pure but still Dynamic and not as boring as you think.
