Planning on playing DS, SA, and LS, assuming I can freely switch between weapon types. I imagine I would have to grind for the materials necessary to keep all 3 of them updated. Then again they're all slash so add hammer to that.
You are given All the weapons at the start so don't worry about switching. Keep the ones you want to use and sell there rest for money. Yes, like and game that has crafting in it you need parts from monsters some rarer than the other and the RNG will sometimes be an ass about it. Just a small tip, Don't sell the talisman available to you in the beginning. Not that it's important but, It's because the Talisman for Auto Guard does not exist beyond that free talisman.

And most people proficient with it will use it's Charged attack more than just usual comboing. So, the great sword involves more thinking than most weapons because of it's shit speed. GS users needs to learn all the attack patterns for each monster, this is to find an opening when the monster attacks.
One example is one of my Great Sword Set. By utilizing the Focus, Evade +2 and Evade Extender Armor Skills (You'll learn about this later in the full game) I could make things much easier.
Focus -> Decreases the time needed to Charge an Attack
Evade +2 -> Increases invulnerability time when Rolling
Evade Extender -> Increases the distance of your dodge roll
So, with this set up I just need to find the right time where the monster stands still for more than 3 seconds and Attack with a Charge Level 3 which takes roughly 3 seconds, after the hit connects instantly roll to avoid the recovery time.
Outside of that I usually do a Hit&Roll Strategy and mostly do Unsheathe Attacks.
This is one of the play-styles that explains why people can tolerate the GS's Slow & encumbering Speed.
Not forcing you to use it or saying it's the greatest weapon in MH, but it's a different kind of Awesome.

What's this about turtle powers? Demo doesn't allow customization.
Armor Skills, are skills fixed into one armor, each armor has different armor skills and skill points fixed to it. These are Passives Skills that can buff or debuff depending on the total of points. For example The Dual Sword Set armor for the demo is the Gobul Armor. It has these skills:
-Expert = 12 points = Critical Eye +1 (Raises Affinity/Critical chances)
-Swimming = 10 Points = Olympic Swimmer (Faster Swimming)
-Eating = 10 Points = Speed Eating +1 (Increase consumption speed)
-Recovery Speed = -10Points = Recovery Speed -1 (Slows Natural Recovery)
As you can see having a positive value means you get a buff, while a negative value will make it a debuff instead. But Usually you need 10 points to activate it. In Case of tje Expert Skill, in the full game you can increase it to 20 Points to get Critical Eye+3 for a 30% increase in critical.
In the full game some armors will have Gem Sockets. These Gem are used to raise/decrease the skill points, so to remove that debuff you just simply need to add a gem with Rec. Speed +1, by making it a -9 the debuff will not activate.
When you're experienced enough, you can mix and match armors for the armor skills you want to optimize.
The size of the armor itself does not affect any movement of the player, if you feel it's "slow" that's mostly affected by the weapon. Only Skills will affect movement, there are skills that adds the invulnerability time on the dodge rolls and there's one that adds it's distance.
Yes, some weapon types are more suitable for different kind of a monsters. But mostly follow the same strategy. If the plesioth is on land, wail on it's legs until it falls. If it's underwater, you just need to get used to water combat and aim at it's main body and head. 20 minutes is pretty hard for a total newbie, but don't worry ,like I said previously in the full game most fights have a 50 minute time limit.

So it's Quality Vs Quantity, DPS vs Large Damage, 10 Hits with the DS Vs 3 hits for the Great Sword.

Oh, God. I can barely get myself to 1 win in Arena. I'v tried at least 4 times already.
Highest character run was probably a hunter too. He's the easiest to play with.
Well, Those Secret Cards really is the Hunter's Forte. I got one win from Suicide. Dude got his Gurubashi to 11, My Health was only 1, but I got the Misdirection Secret Card. I was lucky about that though because he also had another minion summoned, but he got rash, attacked with the Gurubashi, and luckily the Misdirection targeted his hero.

You need higher tier cards to play past 18. Unless, ofc, you have a good deck layout and you get lucky draws.

For example
-You classified the Bowgun as Weak, but that's probably because you're not using the right ammo accompanied with the right armor skills. Bowguns is a high skill weapon and it has high cost usage as you need to craft/buy ammo constantly.
Example why it's Badass:
-One of my friend solo'd to unlock the G-rank (hard difficulty) with only a Heavy bowgun
-A team of 4 people can stagger lock a monster and kill it in under 2 minutes
-Gunlance and Lances are Turtling weapons, You're expected to use the shield more, that's why the only dodge they have is the backstep. The backstep is used more as a combo cancel for advanced users. Then there's a reason why it has a big shield. They're commonly used as defensive fighting. And with the right armor skills you can almost block any attack and counter immediately. Also the Counter from a Lance, and the Wyvern Fire from the Gunlance deals great damage.
-Bows, once again is a high skill weapon, their main difference to the bowgun is they have unlimited ammo. Also it's more of a Status inflicter, So if you're not playing with Status ailment Coatings (Poison/Paralyze/Sleep/Exhaust) it kinda loses it's reason.
Fun Fact, one the most OP weapons is a bow.
-Hunting Horn, the buffers of monster hunter, they play like the hammer but only faster and has a longer distance but not as strong as the Hammer. Users of these weapons has to constantly use melodies to utilize it's potential. They have to remember all the melodies for a weapon. Melodies range from the usual Attack/Defense Up, Health Recovery to giving earplugs (Immune to the roars) and Negate Stamina Use.
Oh yeah, MH3U is on discount for $19.99 in the E-shop until February 3rd.

The demo isn't really good for "true" newbies, because they don't provide you with the really easy monsters to fight with. The demo is mainly for the veterans of older players to get a feel of the newer 3dS controls.
Actually the 50 min time limit is actually very lenient. Once you get used to all the moving, attacking and monster attack pattern, you'll average 15-30 minutes for a monster.
Exceeding the time limit usually only means 2 things : you're equipment is very inadequate for that monster or you just suck so bad, but the latter is unlikely to happen.

The Long Sword is the most versatile and easy to use weapon in the game. Every weapon already has a set of moves but you can chain it into different moves.
Long Sword in particular has a max of 9-10 combo, but you need to use the full gauge and use the Spirit Combo (R button) to execute it. If you want a weapon that focuses on combos and DPS you should try the Dual Swords.
A related question to the above: what's the progression system like? I'm talking leveling up, if there is such a thing.
The only thing you level up is your Hunter Rank, a higher rank will open up harder, newer monsters and bonuses.
My friend summed up the game by calling it a grind. Is that accurate? All you do is rinse and repeat for different sets of armor the entire game?
Yes, that's the main meat of MH, you collect materials gained after killing or capturing to make advanced armor and weapons. But it's not really that grindful, unless you're being screwed by the RNG for the drops.
To really enjoy this game, you really need to set your own goals. Just blindly playing this game will bore you.

Got my first Legendary from a pack. It was Grull, 8 Mana, 7/7, effect gain 1/1 each turn. Kinda "useless", since it can be easily destroyed, and it even got "Mind Controlled" by a Priest one time.

On a side note, I don't think sales can be used to equate the quality of a story,
-SHAFT did all the Monogatari series. If you felt that is different it's because Shaft has to downplay all of the art & animation direction for Nisekoi. Which caused some people to say "Shaft isn't suited for Nisekoi".
-I mentioned sales as a counter argument for people claiming that "Nisekoi would flop without SHAFT". Nisekoi as you can see has rivaled To-Love-Ru's earlier manga sales and TLR is still a cult hit. Following the same logic, Nisekoi couldn't fail If it wasn't done by Shaft because there are people that will like it because it's Nisekoi.
It's still one of the Romcoms still running in Shonen Jump who's known for cancelling series because it's low on the popularity ranks. Heck Nisekoi is the ONLY Romcom manga still running in WSJ, other Romcom who debuted near Nisekoi all got cancelled.
