This can ether be made into muffins or into loafs.

Prep work 15 mins
cook time : 30-50 mins for loafs 9x3x4 or 4x4x2
15-30 mins for muffins

What utensils you'll be needing
*An oven
*a whisk
*2 large bowls and 1 VERY large bowl
*Hands or a potato masher
*measuring cups and measuring spoons
*ladle or some type of scoop/large spoon

Ingredients

2 cups of flour (brown wheat flour will produce a bit more sweeter result of the baked good)

1 teaspoon of baking soda, baking powder and salt

2-3 teaspoons of cinnamon

1/2 cup of vegetable or corn oil (ether one works)

2 large eggs

1 cup of sugar

4-5 ripe bananas (the ripper the better)

3 teaspoon of vanilla extract
*if your using imitation vanilla or if your vanilla is weak in taste use 4 tspns

And some butter or non-stick spray for your loaf/muffin container

Now to assemble the ingredients!

(1)Place the 2 cups of flour, the 1 teaspoons of baking soda, baking powder and salt together in a large bowl and mix together.

(2)In a bowl, crack the 2 eggs and slowly add the 1 cup of sugar and cream them. (whisk the eggs until they become a light yellow)

(3)Now peal the bananas and place in a very large bowl with the 1/2 cup of oil, cinnamon and vanilla. Ether use your hands or the potatoe masher, and start mashing them together until its become the consistency of pudding and you don't see any more oil by it self.

USING YOUR HAND TO MAKES THESE STEPS EASIER
(4)Now combine the creamed eggs into the banana mixture and mix till everything is combined properly.

(5)Now mix half of the flour into the banana mixture and add then add the other half slowly (so you don't make a mess), keep mixing until you dont see any more flour and it looks like paste.

(6)Now scoop/ladle the banana batter into your lubed up loafs/muffin tins.

(7)Place your loafs/muffin tins in the middle rack of the oven.
in
15 mins check on muffins and rotate them 180 degrees
30 mins check on the loafs and rotate them 180 degrees

(8) Now for you muffins they should be done in 30 mins, but if they jiggle it means they still have about 10 mins left just wait a bit.

For the loafs they should be done in 45 mins, but if they jiggle it means they still have about 10-18 mins left just wait a bit.
-To know that they're fully cooked inside, you can give a push on the top of the bread if it feel squishy give it 10-18 mins or just poke the center with a toothpick, if its dry its done if not, wait.


Once they're done let them cool in the tray or your mouth will be burned.


If you let them cool, you can make a cream cheese frosting.
use 1 package of room temperature cream cheese, 2 teaspoons of butter, 1 teaspoon of vanilla and a 1/2 to 1 cup of powdered sugar. Mix them all together using a whisk or a machine that has a whisk attachment, until smooth and creamy.

you can dip them or pipe them, your choice.


The banana bread is good up to 12 days in the fridge and 3ish days outside the fridge, before it starts to pick up odd flavors.
